Shortbread
Ingredients:
125g Butter
50g Caster Sugar
100g Plain Flour
50g Cornflour
Method:
- Preheat oven to 160 degrees C (Gas mark 3/4)
- Cream butter and sugar, add flours and knead a little
- Press into a round tin or roll into sausage and slice for smaller biscuits.
- Bake for about 30 mins until they have a little colour.
- Leave to cool.
Ingredients:
250g Plain Flour
1 tspn Bicarbonate of Soda/Baking Powder
Pinch of Salt
115g Butter
115g Dark Brown Soft Sugar
2 Eggs, beaten
500g Mashed Over-Ripe Bananas
Method:
- Preheat oven to 180 C (Gas Mark 4) and lightly grease a loaf tin
- In a large bowl, combine flour, bicarbonate of soda and salt
- In a separate bowl, cream the butter and sugar. Stir in eggs and mashed banana. Stir banana mix into flour mixture. Pour mixture into loaf tin.
- Bake for 60 - 65 mins, until a knife inserted into centre of the loaf comes out clean. Leave to cool in tin for 10 mins, then turn out onto a wire cooling rack.
